Abstract

Background : The white inner rind of watermelon (albedo) is generally not consumed because ittastes bland, so it is thrown away as food waste. Albedo watermelon contains quite high levels ofcitrulline, potassium and pectin. Apart from tasting delicious, honey pineapple also containspotassium, pectin and antioxidants. The prevalence of hypertension in Kendari City is quite high,namely 27.2%. The citrulline, pectin and potassium content found in the rind of watermelon andpineapple honey can help reduce high blood pressure for hypertension sufferers. This researchaims to determine the acceptability, fiber and potassium levels in several comparisons ofwatermelon rind and honey pineapple in making jelly drinks.Methods: This research is anexperimental study, carried out in July 2023. Making jelly drinks using a comparison between thealbedo of watermelon and honey pineapple juice as well as organoleptic tests with a total of 30panelists, was carried out at the Food Science Laboratory, Nutrition Department, Kendari HealthPolytechnic. Measurement of fiber and potassium levels in jelly drink products using AAS andgravimetric methods at the Biomolecular and Environmental Laboratory, FMIPA, HaluoleoUniversity. Organoleptic test data analysis used the Kruskal Wallis test, fiber and potassiumcontent data were analyzed descriptively. Results : From the organoleptic test results of thewatermelon rind jelly drink product with honey pineapple, the treatment that had the highestacceptability in the very like category in terms of color, aroma and taste aspects was treatmentthree (P3), namely the color aspect (81.4%), the aroma aspect (80.8%) and taste aspect (89.1%).The jelly drink proximate test results showed fiber levels (0.48 mg) and potassium levels (89.60mg). Conclusion: Based on all the combined attributes of the panelists, they preferred the jellydrink in treatment three (P3) with a honey pineapple formulation of 15%.
