Abstract
Background : Spinach flour added to processed sponge cakes will affect the results of the sponge cake product. This is because there will be changes in the physical properties of sponge cakes in general, adding this type of vegetable in the form of flour will cause changes in color, taste, texture and smell. Method : This research is pre-experimental and was carried out on July 4 2023. This research consists of 4 types of treatment, namely P0, P1, P2, and P3. This research was carried out on July 4 2023. Starting from making sponge cake with spinach flour substitution and organoleptic testing with a total of 25 panelists. Located in the Food Science Laboratory, Nutrition Department, Kendari Health Polytechnic. Result : From the results of organoleptic trials of sponge products with spinach flour substituted, the treatment that had the highest acceptability in the very like category in terms of color, aroma, taste and texture was treatment one (P1), namely the color aspect (76.8%), the aroma (65%), taste aspect (81.6%), and texture aspect (76%). Conclusion : He products preferred by panelists are based on a combination of all attributes, panelists prefer product P1, with a ratio of 180 grams of wheat flour and 20 grams of spinach flour, then products P2 and P3 Suggestion : Future researchers are expected to add nutritional levels to be studied in sponge cake products Key words : Receptivity, Sponge Cake, and Spinach Flour.
