Abstract

Backgrounds: Bananas sale is one form o;f processing banana drying Process. This sale bananas are generally made from green banana, planlain. Characteristics of banana sale is brownish yellov, the taste and Jlav of banonas, can be retained for 6 months, and not oyergrown with fungus. Drying bananas for sale that is u'ell known in the community is through drying in the sun is done for approximately 5 da1'5. 17i"7 bananas evenly oter the surface such as zinc, woven bamboo, or other. The drying as usual i'ith lhe sale of banana produced color dark brou'n to blackish, making it less attractiNe in terms of appearance. Other factors that con affecl the quality of the banana sale is the surface area of the banana sale. To speed ttp the drying of foodsttffi generally be dried sliced first. Objectives: This study airns lo determine lhe acceptability of color, flat'or, aroma, and texttrre of banana sale based on the thickness and different drying ntethods. Metlrods: This type of research is a pre- experimenlal design tith q randomized block design. Panelists v'ere used by 40 peoples. Resulls: The results of this research thot there is a difference Yith the sale of bonana occeptance lhicknesses and dffirent dryint urr,rurt bosed on otlribules of color, Jla"-or, te ure, and aronta.
